Minted Walnut & Cantaloupe Soup

A chilled soup for a hot Summer day made with cantaloupe, our Elmhurst Milked Walnuts™, and a touch of mint.

Prep Time: 15 minutes
Yield: 4 servings
Serving Size: 1-1/2 cups

Ingredients

1/4 cup Elmhurst Milked Walnuts
1 Cantaloupe, Peeled and Seeded
1 tbsp. Lime Juice
1 tsp. Salt
2 tbsp. Mint, Thinly Sliced

Directions

  1. Cut the cantaloupe into large dices and add about 1/2 of them with the Elmhurst Milked Walnuts™  and lime juice to a blender and puree until smooth.
  2. Add the rest of the melon and repeat step 1.
  3. Season with salt.
  4. Serve immediately with mint of refrigerate for later use.
