Cashew Rice Pudding

A raisin-vanilla rice pudding with rice simmered in ElmhurstMilked Cashews until softened and sprinkled with cinnamon.

Serving size: approx. 1 cup


4 cup ElmhurstMilked Cashews
1 ½ cup White Rice, Cooked
⅔ cup Sugar
½ tsp. Salt
2 Large Eggs, Whisked
1 ½ cup Golden Raisins
2 tbsp. Butter
½ tsp. Vanilla Extract
½ tsp. Almond Extract
2 tsp. Cinnamon, Ground


  1. In a sauce pan, combine ElmhurstMilked Cashews, rice, sugar, and salt. Simmer for 15 minutes.
  2. On low heat, whisk in eggs.
  3. Add raisins, butter, vanilla extract, and almond extract.
  4. Let pudding cool and sprinkle with cinnamon before serving.
