Caramel-Cashew Bananas Foster

Ripe bananas glazed in a Rum – Elmhurst Milked Cashews™ caramel sauce, and served with vanilla ice cream.

Serving Size: 1-1/2 cups


1/4 cup Elmhurst Milked Cashews

1/2 cup Brown Sugar, Packed

1/2 cup Butter

1 tsp. Cinnamon

1/4 cup Rum

2 cups Banana Slices

2 scoops Vanilla Ice Cream


  1. Heat the brown sugar and butter in a large saucepan until combined.
  2. Mix in the Elmhurst Milked Cashews and cinnamon.
  3. Carefully add in the rum.
  4. Add in the banana slices and cook until hot, about 1 minute.
  5. Serve with the vanilla ice cream and the pan sauce.

Vegan Alternative

Use a 1/2 cup of vegan butter and 2 scoops of vegan vanilla ice cream
