Caramel Apple Walnut Cheesecake

A soft cheesecake with an Elmhurst Milked Walnut™ – cream cheese filling, topped with sliced apples and warm caramel sauce.

1/3 cup Butter, Melted

1-1/2 cups Graham Cracker Crumbs

3 tbsp. Sugar


1/2 cup Elmhurst Milked Walnuts

2 lbs. Cream Cheese, Softened

1 cup Sugar

1 tsp. Vanilla

4 Eggs


1/2 cup Butter

1/2 cup Brown Sugar, Packed

2 Apples, Peeled & Sliced

1 tbsp. Cinnamon

1/3 cup Walnuts, Chopped


  1. Preheat the oven to 325°F
  2. Mix butter, graham cracker crumbs, and sugar together in a small mixing bowl.
  3. Press the mixture into a 9-inch springform pan to form the crust.
  4. In a mixer, beat the Elmhurst Milked Walnuts™, cream cheese, sugar, and vanilla together.
  5. Add the eggs 1 at a time on low speed to incorporate properly.
  6. Pour the cream cheese mixture onto the crust and spread evenly
  7. Bake and cover for about 30 minutes, then uncover and bake for 25 more minutes, or until the center is almost set.
  8. Remove the cheesecake from the springform pan.
  9. In a sauce pan, heat up the butter and brown sugar until the butter is melted.
  10. Add in the apples, cinnamon, and walnuts and mix.
  11. Cook until the apples soften, then let the mixture cool.
  12. Top the cheesecake with the caramel-apple mixture and serve
