At Elmhurst we use an innovative milking process that allows us to produce a delicious, whole food, non-dairy milk that contains all of the nutrition of whole nuts with a superior creamy texture without ever using industrial stabilizers, emulsifiers or gums. Our mission is to educate you, the public, on the hidden, unhealthy and unnecessary ingredients that other leading brands are using to make their nut milks. How do we accomplish this?
1. WE NEVER USE INDUSTRIAL FILLERS
We don’t use industrial stabilizers, emulsifiers or gums like carrageenan, locust bean, or xanthan, which many of the leading brands do (have you read their ingredient lists?). Nature has done a pretty great job, so why add unnecessary chemicals to our foods?
2. WE ONLY USE WHOLE INGREDIENTS
We use whole, raw ingredients, and never pre-processed industrial barrels of paste like the other leading brands do. Often nuts are sold as commodities from many farms and then processed into paste that then sits in barrels until they are used to make many of the nutmilks you see on the shelves today.
3. WE USE A MORE NUTRITIOUS QUANTITY OF INGREDIENTS
We use more nuts in every serving, often up to 4 times the amount, than the other leading brands. Using more whole nuts provides a more nutritious and satisfying nutmilk.
4. WE USE COLD MILLING
We use a simple mechanical milling and pressing technique that naturally converts our whole nuts into a delicious, creamy milk.
5. WE RETAIN AND BLEND IN ALL OF THE NUTRITION FROM OUR INGREDIENTS
Our innovative process extracts all of the protein, fat and micronutrients of our ingredients and makes these more accessible for digestion. This means we never need to fortify our products with pea or rice protein like the other leading brands.
At Elmhurst, we believe that sustainability is the only way forward. This is why we are using sustainable packaging that is FSC Certified and recyclable. Our packaging generates 41% less CO2 than disposable PET (plastic) bottles, creating a much lower carbon footprint.
What does FSC Certified (Forest Stewardship Council) mean? Over the past 20 years, FSC has earned a reputation as the most rigorous, credible forest certification system. As a result, there are significant advantages to choosing FSC certified products:
Credibility – FSC is an independent, member-led group organized into social, environmental, and economic chambers that have equal authority. This open and balanced approach is unique to FSC and ensures a diversity of perspectives are represented in decision making.
Environmental Protection – FSC’s forest management standards expand protection of water quality, prohibit harvest of rare old-growth forests, prevent loss of natural forest cover and prohibit highly hazardous chemicals, which are all unique aspects of the system.
Community Engagement – FSC requires forest managers – on both public and private lands – to engage local community members and to protect customary rights of indigenous people, ensuring their voices are part of the certification process and impacts of forest operations are addressed.
