If you’re looking for a simple way to spice up your taco night, these vegan tostadas are super tasty and easy to whip up. Made with refried beans, creamy avocado, and our dairy-free sour cream – all layered on a crispy tortilla for the perfect crunch.

Ingredients:

  • • 2 tortillas
  • • Cooking spray
  • • ½ cup vegan refried black beans
  • • ¼ tsp garlic powder
  • • ¼ tsp cumin
  • • ¼ tsp chili powder
  • Optional - salt to taste

Our Toppings of choice:
  • • ½ cup shredded lettuce
  • • ¼ cup pico de gallo
  • • Sliced avocado
  • • 2 Tbsp Elmhurst Sour Cream
  • • Juice of ¼ of a lime

Directions:

  1. Heat a small skillet over medium heat and spray with the cooking spray.
  2. Place the tortillas in the pan and cook for 1-2 minutes per side, or until crispy. Set aside.
  3. Add refried beans to your pan with the spices and heat until warm
  4. Start by layering your beans, then the lettuce, pico, avocado & any other toppings
  5. Add a squeeze of Elmhurst dairy free sour cream
  6. Finish it off with a drizzle of fresh lime juice.
  7. Enjoy!
